Vegan Parmesan Cheese Recipe

There were all sorts of requests, a few of the requests I’d already posted on the site, some recipes are awaiting you in my cookbook (can’t wait!) , but there were a few I did not have a response for…yet. Was for cottage cheese that is vegan. Who knew!?

I had a Google and you guys were perfect. I didn’t find any brands. They used too weird or looked too complicated, although there were a few recipes. Boom!
What is this madness made from? Our friend that is fine tofu! I used a tofu seasoned and for the part, which I mixed . I crumbled for the feel in firm tofu. My parents was stopping by, so they agreed, and I managed to make them taste test it for me, it’s pretty dang close to cottage cheese that is classic. Woot woot!

To create Easy & Quick Vegan Cottage Cheese: Insert the silken tofu and blend until everything is smooth.

Now, this part is more on the side of this scale that is white on account of the yeast, but that seems like a big deal to me if the flavour buddies are are there. It will whiten up although the firm tofu is inserted, but still is not bright white.

You can use other nuts if you can not find cashews. Use skinless and unsalted nuts. The ingredients are essential to find the cheese flavor.

I have been addicted to cheese for years, I am serious! It was tough for me to stop eating cheese. I am a vegan so I never eat it and I hardly miss it, but I do and that I consume any vegan choice. I prefer to create my vegan cheese because it is healthier and cheaper and I will avoid additives and preservatives.

 

I maintain the Parmesan cheese in a glass jar. Because all of the components are dry, it lasts quite a while. You can prepare this cheese in under 5 minutes and you can use it. I really like it so much, I could eat it!

INGREDIENTS

  • 1 cup unsalted cashews (150 g)*
  • 4 tbsp brewer’s or nutritional yeast
  • 1 tsp fine sea salt
  • 1 tsp garlic powder

INSTRUCTIONS

  1. Grind all the ingredients in a grinder or food processor until well mixed.

NOTES

* You can also use other nuts like walnuts or almonds, although I prefer to use cashews because they have a neutral flavor.
